Equipment

  • Medium mixing bowl
  • Sturdy whisk or fork
  • Measuring cups and spoons
  • Citrus juicer or reamer
  • Microplane or fine grater (for garlic and ginger)

Ingredients

  • ½ cup creamy peanut butter natural, no-stir preferred
  • 3 tablespoons soy sauce or tamari for gluten-free
  • 2 tablespoons rice vinegar
  • 1 tablespoon sriracha or chili garlic sauce
  • 1 tablespoon honey or maple syrup
  • 1 clove garlic, finely grated
  • 1 teaspoon fresh ginger, grated
  • 2-3 tablespoons warm water as needed for consistency
  • Juice of ½ fresh lime

Instructions

  • In a medium mixing bowl, combine the creamy peanut butter, soy sauce, rice vinegar, sriracha, honey, grated garlic, and grated ginger.
  • Using a sturdy whisk or fork, vigorously stir the ingredients together until they form a thick, cohesive, and glossy paste.
  • Add the warm water, one tablespoon at a time, whisking continuously after each addition. Stop when the sauce reaches your desired consistency—thicker for a dip, thinner for a dressing.
  • Squeeze in the fresh lime juice and whisk one final time to combine.
  • Taste the sauce and adjust seasoning: add a pinch more soy sauce for saltiness, a little more honey for sweetness, or an extra splash of water to thin. Serve immediately or store in the refrigerator.

Notes

For best results, let peanut butter sit at room temperature for 10 minutes before starting to ensure smooth whisking. Store leftover sauce in an airtight container in the refrigerator for up to one week; it will thicken when chilled, so stir in a little warm water before using. Variations: For a nut-free version, substitute sunflower seed butter or tahini. For extra richness, replace the water with 2 tablespoons of full-fat coconut milk. Add 1 teaspoon toasted sesame oil for a nutty aroma, or fold in fresh cilantro or Thai basil just before serving.
