Ingredients
  

  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 1 cup granulated sugar
  • ½ cup packed brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups shredded zucchini, moisture squeezed out
  • ½ cup chopped walnuts or pecans (optional)
  • ½ cup chocolate chips (optional)

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  • In another bowl, whisk granulated sugar, brown sugar, and vegetable oil. Add eggs one at a time, then stir in vanilla extract.
  • Gradually mix dry ingredients into wet mixture until just combined.
  • Fold in shredded zucchini, nuts, and chocolate chips (if using).
  • Spread batter evenly in prepared pan. Bake 25–30 minutes, or until a skewer comes out clean.
  • Let bars cool completely before slicing into squares.

Notes

Optional Add-Ins: Chocolate chips, chopped nuts, or even a cream cheese swirl work wonderfully.
Storage: Keep in an airtight container at room temp for 3 days or refrigerate for a week. Freeze for up to 2 months.
