Ingredients
  

  • 1 cup freshly squeezed lemon juice (from 6–8 lemons)
  • ½ cup granulated sugar
  • ½ cup water (for simple syrup)
  • 1 cup heavy cream
  • 2 cups ice

Instructions
 

  • Juice the lemons to get about 1 cup of fresh lemon juice. Strain out seeds and pulp.
  • In a saucepan, combine ½ cup water and ½ cup sugar. Heat and stir until sugar dissolves to make simple syrup. Let cool.
  • In a blender, combine lemon juice, cooled simple syrup, heavy cream, and ice.
  • Blend until thick, smooth, and frothy. Avoid over-blending to prevent separation.
  • Taste and adjust with more lemon juice or syrup as needed. Pour into glasses, garnish, and serve immediately.

Notes

Chill your glasses beforehand for extra refreshment. Don’t over-blend — the cream may separate. Add lemon zest or vanilla for more depth. You can prep the simple syrup in advance and keep it refrigerated for up to a week.
