Equipment

  • Large baking sheet
  • Large pot or Dutch oven
  • Chef's knife
  • Cutting board
  • Vegetable peeler
  • Immersion blender or countertop blender
  • Measuring spoons
  • Measuring cups
  • Wooden spoon or spatula
  • Ladle

Ingredients

  • 1 large butternut squash about 3 pounds
  • 2 tablespoons olive oil, divided
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon cayenne pepper optional
  • 4 cups low-sodium vegetable broth or chicken broth
  • 1 tablespoon apple cider vinegar
  • Salt and freshly ground black pepper, to taste
  • Optional toppings: toasted pumpkin seeds, a swirl of yogurt or coconut milk, fresh thyme

Instructions

  • Preheat your oven to 400°F (200°C). On a large baking sheet, toss the cubed butternut squash with 1 tablespoon of olive oil and a generous pinch of salt. Spread it in a single, even layer. Roast for 25-30 minutes, flipping halfway through, until the squash is tender and the edges are lightly browned.
  • While the squash roasts, heat the remaining 1 tablespoon of olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook, stirring occasionally, for 5-7 minutes until it becomes soft and translucent.
  • Add the minced garlic, cumin, nutmeg, and cayenne (if using) to the pot. Cook for 1 more minute until fragrant, stirring constantly so the garlic doesn't burn.
  • Add the roasted squash to the pot with the aromatics. Pour in the vegetable broth and bring the mixture to a gentle boil. Reduce the heat to low, cover the pot, and let it simmer for 10 minutes to allow the flavors to meld.
  • Remove the pot from the heat. Use an immersion blender directly in the pot to puree the soup until it is completely smooth and velvety. If using a countertop blender, carefully transfer the soup in batches, remove the center cap from the lid, cover it with a towel to let steam escape, and blend until smooth.
  • Stir in the apple cider vinegar. Taste the soup and adjust the seasoning with salt and pepper. Add more vinegar for brightness or an extra pinch of cayenne for heat if desired.
  • Ladle the soup into bowls and add your favorite toppings, such as a swirl of yogurt, a sprinkle of toasted pumpkin seeds, and a few fresh thyme leaves.

Notes

For a dairy-free version, use full-fat coconut milk instead of yogurt. To save time, you can use pre-cubed butternut squash. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 3 months. For a richer flavor, try the Brown Butter Bliss variation: melt 2 tablespoons of butter until golden brown and drizzle over each bowl before serving. For a Ginger Zing, add 1-inch of fresh grated ginger with the garlic. For an Apple Twist, sauté one peeled, chopped apple with the onion. For a Coconut Curry, stir in 1 tablespoon of red curry paste with the spices and replace 1 cup of broth with full-fat coconut milk.
