Ingredients
  

  • 1 pound Smoked Sausage Kielbasa, Andouille, or your favorite
  • 2 pounds Potatoes Russet, Yukon Gold, or Red Potatoes
  • 1 large Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Bell Pepper any color
  • 2 tablespoons Olive Oil
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic Powder
  • ½ teaspoon Onion Powder
  • ½ teaspoon Dried Thyme
  • ¼ teaspoon Red Pepper Flakes optional
  • Salt to taste
  • Black Pepper to taste
  • Fresh Parsley, chopped optional
  • Sour Cream or Greek Yogurt optional
  • Shredded Cheddar Cheese optional

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Prepare all your ingredients: Slice the sausage, chop the potatoes, onion, and bell pepper, and mince the garlic.
  • In a large oven-safe skillet or Dutch oven, heat the olive oil over medium heat.
  • Add the chopped onion and bell pepper and cook until softened, about 5-7 minutes.
  • Add the minced garlic and cook for another minute until fragrant.
  • Add the sliced smoked sausage and cubed potatoes to the skillet.
  • Season with paprika, garlic powder, onion powder, dried thyme, red pepper flakes (if using), salt, and black pepper.
  • Stir well to combine all the ingredients and ensure the potatoes and sausage are evenly coated with the spices.
  • Transfer the skillet to the preheated oven.
  • Bake for 30-40 minutes, or until the potatoes are tender and slightly browned. Stir halfway through to ensure even cooking.
  • Carefully remove the skillet from the oven.
  • Garnish with fresh parsley, sour cream or Greek yogurt, and shredded cheddar cheese, if desired.
  • Serve immediately and enjoy your delicious Smoked Sausage & Potatoes!

Notes

Choose your favorite potato variety – Russets for fluffiness, Yukon Golds for creaminess, or Red potatoes for a waxy texture. Adjust spices to your taste. Kielbasa is a classic sausage choice, while Andouille adds a spicy kick. Leftovers can be stored in the refrigerator for 3-4 days and reheated in the microwave or skillet.
