Ingredients
  

  • 1 pound Italian sausage sweet or hot, your preference!
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ¼ teaspoon red pepper flakes optional, for a little heat
  • 4 cups chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese, plus more for garnish
  • Salt to taste
  • Pepper to taste
  • Fresh basil leaves, for garnish

Instructions
 

  • In a large pot or Dutch oven, heat the olive oil over medium-high heat.
  • Add the sausage and cook, breaking it up with a spoon, until browned and cooked through. Drain off any excess grease.
  • Add the chopped onion to the pot and cook until softened, about 5 minutes.
  • Add the minced garlic, oregano, basil, and red pepper flakes (if using) and cook for another minute until fragrant.
  • Pour in the crushed tomatoes and chicken broth. Bring the mixture to a simmer.
  • Reduce the heat to low and simmer for 15 minutes to allow the flavors to meld together.
  • Stir in the heavy cream and Parmesan cheese. Heat through, but don't boil.
  • Add the tortellini and cook according to package directions, usually about 3-5 minutes, or until tender.
  • Season the soup with salt and pepper to taste.
  • Garnish with fresh basil leaves and extra Parmesan cheese.
  • Serve immediately and enjoy!

Notes

For a richer flavor, use homemade chicken broth. To prevent the tortellini from becoming mushy, add them at the very end of the cooking process. This soup can be stored in the refrigerator for up to 3 days or frozen for up to 2 months. If freezing, it is recommended to cook the tortellini separately and add them after reheating to prevent a change in texture. Consider adding vegetables such as spinach or carrots for extra nutrients. Serve with crusty bread for dipping.
