Ingredients
  

  • 2 slices bread Sourdough, Brioche, or Texas toast
  • 2 tablespoons butter, softened
  • 4 slices cheese Cheddar, Gruyere, Monterey Jack, or Pepper Jack
  • 4 slices cooked bacon, crispy and crumbled
  • ½ medium tomato, thinly sliced
  • ½ cup caramelized onions
  • 1 medium yellow onion, thinly sliced
  • 1 tablespoon olive oil
  • ¼ teaspoon sugar
  • Salt to taste
  • Pepper to taste

Instructions
 

  • If making caramelized onions, heat butter and olive oil in a skillet over medium-low heat.
  • Add sliced onions to the skillet and stir to coat with fat.
  • Sprinkle onions with sugar, salt, and pepper.
  • Cook, stirring occasionally, for 30-45 minutes, or until deep golden brown and very soft. Add a tablespoon of water if they start to stick. Set aside.
  • Spread one side of each slice of bread with softened butter.
  • Place one slice of bread, butter-side down, in a cold skillet.
  • Add two slices of cheese to the bread in the skillet.
  • Layer on the cooked bacon, sliced tomatoes, and caramelized onions.
  • Top with the remaining two slices of cheese.
  • Place the second slice of bread on top, butter-side up.
  • Place the skillet over medium-low heat.
  • Use a spatula to gently press down on the sandwich.
  • After 3-5 minutes, or when the bottom slice of bread is golden brown, carefully flip the sandwich.
  • Continue grilling for another 3-5 minutes, or until the second slice of bread is golden brown and the cheese is melted and gooey.
  • Remove the Loaded Grilled Cheese from the skillet and cut in half. Serve immediately.

Notes

For even browning, use softened butter. Cooking over medium-low heat allows the cheese to melt completely without burning the bread. Consider using mayonnaise instead of butter for an extra crispy and tangy crust. Experiment with different cheeses and fillings for unique flavor variations. Some tasty additions could include roasted red peppers, Kalamata olives, feta cheese, pesto, sun-dried tomatoes, mozzarella cheese, jalapeños, pepper jack cheese, or scrambled eggs and sausage.
