Ingredients
  

  • 1.5 lbs Sirloin or Ribeye Steak, cut into 1-inch cubes
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 4 tablespoons Unsalted Butter
  • 4 cloves Garlic, minced
  • 1 tablespoon Fresh Parsley, chopped
  • ½ teaspoon Red Pepper Flakes optional
  • 1 tablespoon Worcestershire Sauce
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Lemon Juice

Instructions
 

  • Cut the steak into 1-inch cubes. Pat them dry with paper towels and season with salt and pepper.
  • Mince the garlic and chop the parsley. Set aside.
  • Heat the olive oil in a large cast-iron skillet over high heat. Once the pan is smoking hot, add the steak bites in a single layer (work in batches if necessary to avoid overcrowding).
  • Sear for 2-3 minutes per side, until browned and cooked to your desired level of doneness. For medium-rare, aim for an internal temperature of 130-135°F.
  • Remove the steak bites from the skillet and set aside. Reduce the heat to medium and add the butter to the skillet. Once melted, add the minced garlic and red pepper flakes (if using).
  • Cook for 1 minute, until fragrant, being careful not to burn the garlic.
  • Stir in the Worcestershire sauce, soy sauce, and lemon juice. Bring to a simmer and cook for 1 minute.
  • Add the steak bites back to the skillet and toss to coat them in the garlic butter sauce.
  • Garnish with fresh parsley and serve immediately.

Notes

Don't overcook the steak; it will continue to cook slightly after you remove it from the pan. Adjust the garlic butter sauce to your taste by varying the amount of garlic, red pepper flakes, or lemon juice. These steak bites are best served immediately, while they're still hot and juicy. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and gently reheated in a skillet or microwave. For variations, add a pinch of cayenne pepper or a dash of hot sauce for spicy steak bites, or add a tablespoon of honey for honey garlic butter steak bites. Sauté sliced mushrooms before adding the garlic butter sauce for a mushroom version.
