Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • Salt to taste

  • 1 tablespoon butter
  • ½ cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • ½ cup milk or heavy cream

  • ½ cup cooked bacon crumbles optional
  • ½ cup shredded cheddar cheese optional
  • ½ cup sliced mushrooms optional

Instructions
 

  • Season the chicken: In a bowl, toss the chicken cubes with olive oil, garlic powder, paprika, salt, and pepper. Ensure the chicken is evenly coated with the seasonings.
  • Sear the chicken: Heat a large skillet over medium-high heat. Add the seasoned chicken and cook until browned on all sides and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside. Don't overcrowd the pan; cook in batches if necessary to ensure proper browning.
  • Sauté the aromatics: In the same skillet, melt the butter over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
  • Create the base: Reduce heat to low. Add the softened cream cheese to the skillet and stir until melted and smooth. Gradually whisk in the chicken broth and milk (or heavy cream) until the sauce is creamy and there are no lumps.
  • Add ranch flavor: Stir in the ranch seasoning mix until well combined. Simmer the sauce for a few minutes, allowing the flavors to meld together.
  • Combine chicken and sauce: Return the cooked chicken to the skillet with the creamy ranch sauce. Stir to coat the chicken evenly.
  • Simmer and finish: Simmer for another 2-3 minutes, allowing the chicken to warm through and the sauce to thicken slightly. If desired, stir in bacon crumbles, shredded cheddar cheese, or sliced mushrooms during the last minute of cooking.
  • Garnish and serve: Garnish with fresh parsley, if desired. Serve immediately over rice, pasta, mashed potatoes, or your favorite side dish.

Notes

For best results, ensure cream cheese is softened to prevent lumps in the sauce. To make this gluten-free, use gluten-free ranch seasoning mix. You can use chicken thighs instead of chicken breasts. Leftovers can be stored in the refrigerator for up to 3 days. Reheat gently, adding a splash of milk or broth if the sauce has thickened too much. Freezing is not recommended.
