Ingredients
  

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 packet taco seasoning
  • ½ cup water
  • 2 cups shredded cheddar cheese or a Mexican cheese blend
  • 1 large bag 10-11 ounces
  • Optional: Black olives, sliced
  • Optional: Green onions, chopped
  • Optional: Jalapeños, diced

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.
  • Add the chopped onion to the skillet and cook until softened, about 5 minutes.
  • Stir in the tomato sauce, diced tomatoes and green chilies, taco seasoning, and water. Bring to a simmer and cook for 5-7 minutes.
  • In a large mixing bowl, combine the shredded cheese, sour cream, and condensed cream of chicken soup. Mix until well combined and creamy.
  • Lightly crush about half of the Doritos.
  • Spread half of the crushed Doritos evenly in the bottom of your 9x13 inch baking dish.
  • Pour the ground beef mixture over the Doritos.
  • Spread the cheese mixture evenly over the ground beef.
  • Sprinkle the remaining crushed Doritos over the cheese layer.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted, bubbly, and the Doritos are golden brown.
  • Let the casserole cool for a few minutes before serving.

Notes

For a spicier casserole, add a pinch of cayenne pepper to the ground beef mixture or use a spicier taco seasoning. Diced jalapeños are also a fantastic addition. You can assemble the casserole ahead of time and store it in the refrigerator for up to 24 hours before baking. If the casserole looks like it's drying out while baking, cover it loosely with aluminum foil. Experiment with different Dorito flavors such as Cool Ranch, Spicy Nacho, or Flamin' Hot.
