Ingredients
  

  • 1 pound ground beef
  • ½ cup chopped onion
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup ketchup
  • 1 tablespoon yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese, divided
  • Sesame seeds optional
  • Diced tomatoes optional
  • Chopped pickles optional
  • Shredded lettuce optional

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Line a 9-inch pie plate with one pie crust. Trim and crimp the edges.
  • Dock the bottom of the crust with a fork.
  • Bake the crust for 10-12 minutes, or until lightly golden.
  • While the crust is baking, brown the ground beef in a large skillet over medium-high heat. Drain off any excess grease.
  • Add the chopped onion and cook until softened, about 5 minutes.
  • Stir in the garlic powder, salt, and pepper.
  • Add the ketchup, mustard, and Worcestershire sauce. Mix well and simmer for 5 minutes.
  • In a medium saucepan, melt the butter over medium heat.
  • Whisk in the flour and cook for 1 minute, stirring constantly.
  • Gradually whisk in the milk until smooth.
  • Bring to a simmer, stirring constantly, until the sauce thickens, about 5-7 minutes.
  • Remove from heat and stir in 1 1/2 cups of the shredded cheddar cheese until melted and smooth.
  • Pour the cooked ground beef mixture into the pre-baked pie crust.
  • Pour the cheese sauce over the beef.
  • Sprinkle the remaining 1/2 cup of cheddar cheese over the top.
  • Top with the second pie crust. Crimp the edges to seal. Cut slits in the top crust to allow steam to escape.
  • If desired, brush the top crust with a little milk or melted butter and sprinkle with sesame seeds.
  • Bake for 20-25 minutes, or until the crust is golden brown and the cheese is bubbly.
  • Let the pie cool for at least 10 minutes before slicing and serving.

Notes

For the best results, use a high-quality pie crust and don't skimp on the cheese. Blind baking the crust is crucial for preventing a soggy bottom. You can also brush the bottom of the crust with a little egg white before adding the filling to create a moisture barrier. For variations, try adding chopped vegetables to the beef filling, adding red pepper flakes or pepper jack cheese for a spicy kick, or crumbling bacon over the cheese sauce. Store leftovers in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) until heated through, or reheat individual slices in the microwave.
