Ingredients
  

  • 4 ounces Blanco or silver tequila
  • 2 ounces Orange Liqueur Cointreau or Triple Sec
  • 2 ounces Fresh lime juice
  • 1 cup Fresh pineapple chunks
  • ½ cup Fresh or frozen blueberries
  • Agave nectar to taste
  • 1 cup Ice
  • ½ cup Water
  • ½ cup Sugar
  • Lime wedges, for garnish
  • Pineapple chunks, for garnish
  • Fresh blueberries, for garnish
  • Salt or sugar, for rimming

Instructions
 

  • Prepare the Blueberry Simple Syrup (Optional): In a small saucepan, combine 1/2 cup blueberries, 1/2 cup water, and 1/2 cup sugar. Bring to a simmer over medium heat, stirring until the sugar dissolves and the blueberries burst.
  • Reduce heat and simmer for 5 minutes. Remove from heat and let cool completely. Strain the syrup through a fine-mesh sieve, discarding the solids.
  • Blend the Base: In a blender, combine the pineapple chunks, blueberries (if not using the simple syrup), lime juice, orange liqueur, agave nectar (if using), and a handful of ice.
  • Blend Until Smooth: Blend until completely smooth and creamy. The mixture should be a beautiful, vibrant color.
  • Add the Tequila: Pour in the tequila and blend briefly to combine. Be careful not to over-blend, as this can make the margarita watery.
  • Taste and Adjust: Give it a taste! Add more lime juice for tartness, agave nectar for sweetness, or tequila for a stronger kick.
  • Prepare Your Glasses: If you're using a salt or sugar rim, run a lime wedge around the rim of your glasses and dip them into a plate of salt or sugar.
  • Pour and Garnish: Fill your prepared glasses with ice and pour in the margarita mixture. Garnish with lime wedges, pineapple chunks, and fresh blueberries.
  • Serve Immediately: Enjoy your delicious Pineapple Blueberry Margarita!

Notes

For a sweeter margarita, use ripe pineapple and add agave nectar to taste. If you prefer a tart margarita, use less agave nectar or add more lime juice. To make a mocktail, simply omit the tequila. For an extra refreshing experience, chill your glasses in the freezer before serving. The blueberry simple syrup can be made ahead of time and stored in the refrigerator for up to a week.
