Ingredients
  

  • 1 loaf Italian or French bread 12-18 inches
  • 4-5 medium tomatoes, diced
  • ½ cup fresh basil leaves, chopped
  • 4-5 cloves garlic, minced
  • ½ cup olive oil extra virgin
  • ¼ cup grated Parmesan cheese optional
  • Salt to taste
  • Freshly ground black pepper to taste
  • Pinch of red pepper flakes optional

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Slice the bread lengthwise, creating two long halves.
  • In a medium bowl, combine the diced tomatoes, chopped basil, minced garlic, and olive oil.
  • Season generously with salt and pepper. Add a pinch of red pepper flakes if desired.
  • Spread the tomato basil garlic mixture evenly over both halves of the bread.
  • If using, sprinkle the Parmesan cheese over the top of the tomato mixture.
  • Place the bread halves on a baking sheet.
  • Bake for 12-15 minutes, or until the bread is golden brown and the tomatoes are softened.
  • Remove from the oven and let cool slightly before slicing into individual pieces.
  • Serve immediately.

Notes

To prevent soggy bread, avoid overloading the tomatoes and consider toasting the bread lightly beforehand. If the garlic starts to burn, tent the bread with foil. For variations, try adding different cheeses, vegetables, or spices. Leftovers can be wrapped tightly and stored in the refrigerator for 1-2 days; reheat in the oven for best results.
