Ingredients
  

  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon ground cinnamon
  • ¼ cup packed brown sugar
  • 8 ounces whipped topping, thawed
  • Optional garnishes: Gingersnap cookies, chopped pecans, a sprinkle of cinnamon, chocolate shavings

Instructions
 

  • In a large bowl, whisk together the pumpkin puree, instant vanilla pudding mix, pumpkin pie spice, cinnamon, and brown sugar until there are no lumps.
  • Pour in the chilled evaporated milk and whisk until smooth and well combined. The mixture will thicken slightly.
  • Gently fold in the thawed whipped topping until just combined. Be careful not to overmix.
  • Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or preferably overnight.
  • Spoon the pumpkin fluff into serving dishes or individual cups.
  • Garnish with crushed gingersnap cookies, chopped pecans, a sprinkle of cinnamon, or chocolate shavings.

Notes

For best results, use real pumpkin puree and chill the evaporated milk thoroughly. Don't overmix the fluff after adding the whipped topping. Chill for at least 2 hours to allow the flavors to meld. Store leftover pumpkin fluff in an airtight container in the refrigerator for up to 3 days. For a chocolate chip variation, fold in ½ cup of mini chocolate chips. You can also add a splash of rum or bourbon for a warmer flavor.
