Ingredients
  

  • 1 pound ground beef
  • 1 packet taco seasoning
  • ¼ cup water
  • 3 cups cooked rice white, brown, or cauliflower
  • 2 cups shredded cheese Cheddar, Monterey Jack, or Mexican blend
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • ½ cup sour cream or Greek yogurt
  • ½ cup salsa
  • Optional toppings: avocado, black olives, green onions, cilantro, jalapeños

Instructions
 

  • In a large skillet over medium-high heat, brown the ground beef, breaking it up with a spoon as it cooks. Drain off any excess grease.
  • Stir in the taco seasoning and water. Cook for another 2-3 minutes, until the beef is evenly coated and the seasoning is fragrant.
  • Divide the cooked rice among bowls.
  • Top with the seasoned ground beef, shredded cheese, diced tomatoes, shredded lettuce, sour cream, and salsa.
  • Add your favorite toppings, such as avocado, black olives, green onions, cilantro, or jalapeños. Serve immediately and enjoy!

Notes

For a vegetarian option, use lentils or black beans instead of meat. Plain Greek yogurt can be used in place of sour cream for a healthier alternative. If you're out of taco seasoning, use a blend of chili powder, cumin, paprika, garlic powder, onion powder, oregano, and salt. Cauliflower rice is a great low-carb option. Store leftovers in the refrigerator for up to 3 days.
