Equipment

  • Medium-sized pot with lid
  • Steamer basket or metal colander
  • sharp knife
  • Cutting board
  • serving bowl
  • Clean Kitchen Towel

Ingredients

  • 1 large head of broccoli about 1.5 lbs / 680 g
  • Water, enough to create 1 inch in the pot
  • ½ teaspoon flaky sea salt or kosher salt or to taste
  • 1 tablespoon butter optional, for serving
  • 1 tablespoon fresh lemon juice optional, for serving
  • 1 tablespoon extra-virgin olive oil optional, for serving

Instructions

  • Rinse the head of broccoli under cold water. Using a sharp knife, cut the florets away from the thick central stalk, making the florets roughly the same size for even cooking.
  • Peel the tough outer skin from the stalk and slice it into 1/4-inch thick coins. Do not discard the stalk.
  • Fill a medium-sized pot with about an inch of water. Place a steamer basket or a metal colander inside the pot. The water should not touch the bottom of the basket.
  • Bring the water to a rolling boil over high heat.
  • Once the water is boiling, carefully add the broccoli florets and stalk pieces to the steamer basket in a single layer. Cover the pot tightly with a lid.
  • Reduce the heat to medium-high and steam for 3 to 5 minutes. Start checking at the 3-minute mark; the broccoli should be bright green and easily pierced with a fork but still firm.
  • As soon as the broccoli is done, remove it from the steamer basket and transfer it to a serving bowl. Toss immediately with salt and any optional finishes like butter, lemon juice, or olive oil. Serve hot.

Notes

For the best texture, pat the washed broccoli dry with a clean kitchen towel before steaming to avoid boiling. If using frozen broccoli, add 2-3 minutes to the steaming time and do not thaw first. Common mistakes include overcooking (broccoli turns army green and mushy) and cutting florets too large (cooks unevenly). Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat gently in the microwave or a skillet.
