Ingredients
  

  • 1 lb sirloin steak, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 1 bell pepper (any color), chopped
  • 1 tsp chili powder
  • 1 tsp cumin
  • 0.5 tsp garlic powder
  • 0.25 tsp paprika
  • salt and pepper, to taste
  • 2 cups cooked rice (long-grain or brown)
  • 1 cup queso (store-bought or homemade)
  • optional toppings: diced tomatoes, avocado, cilantro, sour cream, salsa

Instructions
 

  • Season steak pieces with salt, pepper, chili powder, cumin, garlic powder, and paprika.
  • Heat olive oil in a large skillet over medium-high heat. Add onion and bell pepper; sauté until softened (5–7 minutes).
  • Add seasoned steak to skillet. Cook 5–7 minutes until browned and cooked through. Work in batches to avoid overcrowding.
  • Lower heat. Stir in cooked rice and queso. Mix until combined and heated through (2–3 minutes).
  • Serve hot with optional toppings like avocado, salsa, or cilantro.

Notes

Use sirloin, flank, or skirt steak for great results. Don’t overcrowd the pan when searing. Homemade queso takes this to the next level, but store-bought works too. Customize with toppings like avocado, cilantro, or salsa!
