Ingredients
  

  • 1 cup water
  • 1 cup granulated sugar
  • ½ cup pumpkin puree not pumpkin pie filling
  • 2 tablespoons pumpkin pie spice
  • 1 teaspoon vanilla extract

Instructions
 

  • Combine water and sugar in a medium saucepan.
  • Place the saucepan over medium heat and whisk constantly until the sugar is completely dissolved. The mixture should become clear and smooth.
  • Whisk in the pumpkin puree until it's fully incorporated and there are no lumps.
  • Add the pumpkin pie spice and whisk well to combine.
  • Bring the mixture to a gentle simmer, then reduce the heat to low.
  • Let it simmer for about 5-7 minutes, stirring occasionally. This allows the flavors to meld together and the syrup to thicken slightly.
  • Remove from heat and stir in the vanilla extract.
  • Let the syrup cool completely before transferring it to a glass jar or airtight container.
  • Store in the refrigerator for up to 2 weeks.

Notes

For a smoother syrup, strain it through a fine-mesh sieve after cooling to remove any small bits of pumpkin or spice. Adjust the spice level to your preference by adding more or less pumpkin pie spice. Store in an airtight container in the refrigerator for up to 2 weeks. To prevent sugar crystallization, ensure the sugar is fully dissolved before adding the pumpkin puree. For a richer flavor, try using brown sugar instead of granulated sugar.
