Ingredients
  

  • 1 pound spicy Italian sausage, casings removed
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 2 cloves garlic, minced
  • ½ cup yellow onion, diced
  • 1 tablespoon Italian seasoning
  • ¼ teaspoon red pepper flakes optional, for extra heat
  • 2 tablespoons fresh parsley, chopped optional, for garnish
  • Tortilla chips, crusty bread, vegetables, or crackers for serving

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, crumble and cook the spicy Italian sausage until fully browned and cooked through. Drain off any excess grease.
  • Add the minced garlic and diced onion to the skillet with the sausage. Cook for about 2-3 minutes, or until the onion is softened and fragrant.
  • In a large bowl, combine the browned sausage mixture, softened cream cheese, sour cream, drained diced tomatoes with green chiles, mozzarella cheese, cheddar cheese, and Italian seasoning. Mix well until everything is evenly combined.
  • Pour the mixture into a greased 8x8 inch baking dish (or a similar sized oven-safe dish).
  • Bake in the preheated oven for 20-25 minutes, or until the dip is heated through and the cheese is melted and bubbly. The top should be lightly golden brown.
  • Remove from the oven and garnish with fresh parsley (if using) and a sprinkle of red pepper flakes (if you want an extra kick).
  • Serve immediately with your favorite dipping companions.

For a smoother dip, ensure the cream cheese is fully softened before mixing. To customize the spice level, use mild Italian sausage or adjust the amount of red pepper flakes.
