Ingredients
  

  • 1 pound breakfast sausage hot or mild
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup all-purpose baking mix
  • ½ teaspoon garlic powder optional
  • ¼ teaspoon cayenne pepper optional

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Line a baking sheet with parchment paper.
  • In a large bowl, combine breakfast sausage, softened cream cheese, undrained Rotel, shredded cheddar cheese, baking mix, garlic powder (if using), and cayenne pepper (if using).
  • Mix well with your hands or a sturdy spoon until all ingredients are evenly distributed.
  • Roll the mixture into 1-inch balls.
  • Arrange sausage balls on the prepared baking sheet, leaving a little space between each one.
  • Bake for 20-25 minutes, or until the sausage balls are golden brown and cooked through.
  • Let the sausage balls cool on the baking sheet for a few minutes before serving.

Notes

For drier sausage balls, ensure cream cheese is fully softened and avoid overbaking. Do not drain the Rotel tomatoes. To avoid greasy sausage balls, blot with a paper towel after baking. Sausage balls can be prepared a day or two in advance and stored in the refrigerator until ready to bake. Add a few extra minutes to the baking time if baking from chilled. Store leftover sausage balls in an airtight container in the refrigerator for up to 3-4 days. Reheat in the microwave or oven. For extra spice, add more cayenne pepper, red pepper flakes, or hot sauce. For a milder flavor, use mild sausage and omit the cayenne pepper. Try different cheeses like Monterey Jack or pepper jack. Add finely chopped onions, bell peppers, or jalapeños for added flavor. Mix in fresh herbs like parsley, cilantro, or chives.
