Ingredients
  

  • 1 pound ground beef 80/20
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 cup beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper or more, to taste!
  • Salt and pepper to taste
  • ½ cup honey
  • 1-2 tablespoons hot sauce Sriracha or Louisiana-style
  • ¼ teaspoon red pepper flakes optional
  • Cooked rice white, brown, or quinoa
  • Shredded cheddar cheese
  • Sour cream or Greek yogurt
  • Chopped green onions
  • Diced avocado
  • Crushed tortilla chips
  • Lime wedges

Instructions
 

  • Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  • Add the chopped onion and bell pepper to the skillet and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  • Stir in the diced tomatoes (undrained), black beans, beef broth, chili powder, cumin, smoked paprika, and cayenne pepper. Season with salt and pepper to taste.
  • Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for 15-20 minutes, stirring occasionally, to allow the flavors to meld.
  • While the beef is simmering, prepare the hot honey. In a small saucepan, combine the honey, hot sauce, and red pepper flakes (if using).
  • Heat over low heat, stirring constantly, until the honey is warm and the ingredients are well combined, about 2-3 minutes. Be careful not to boil the honey!
  • Remove from heat and set aside. The longer it sits, the more the flavors will meld. You can even make this ahead of time.
  • Place a generous serving of cooked rice in a bowl.
  • Top with the spicy ground beef mixture.
  • Drizzle generously with the hot honey.
  • Add your favorite toppings: shredded cheddar cheese, sour cream, chopped green onions, diced avocado, and crushed tortilla chips.
  • Squeeze a lime wedge over the top.

Notes

Store leftover ground beef and cooked rice separately in airtight containers in the refrigerator for up to 3 days. The hot honey can be stored at room temperature for up to a week. Reheat the ground beef and rice separately before assembling the bowls. For a spicier bowl, use a hotter hot sauce or add more cayenne pepper to the ground beef mixture. To reduce the heat, use a milder hot sauce or add a dollop of sour cream to the bowl.
