Equipment

  • Large rimmed baking sheet
  • Parchment paper or aluminum foil
  • Chef's knife
  • Cutting board
  • small mixing bowl
  • Whisk
  • Tongs or spatula

Ingredients

  • 1.5 lbs Chicken Breast, sliced into 1/2-inch strips against the grain
  • 3 Bell Peppers red, yellow, and green
  • 1 large Red Onion, sliced into strips
  • 3 tablespoons Olive Oil or Avocado Oil
  • 1 tablespoon Fresh Lime Juice
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder
  • ½ teaspoon Garlic Powder
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper
  • 8-12 Flour or Corn Tortillas
  • Optional: Fresh cilantro, guacamole, sour cream, and cotija cheese for serving

Instructions

  • Preheat your oven to 425°F (220°C) and ensure the rack is in the center position.
  • Line a large, rimmed baking sheet with parchment paper or aluminum foil. If using foil, lightly spray with non-stick oil.
  • Slice the chicken breasts against the grain into even strips about half an inch wide to ensure tenderness.
  • Cut the bell peppers and red onion into strips of a similar width so they cook at the same rate as the chicken.
  • In a small bowl, whisk together the olive oil, lime juice, smoked paprika, cumin, chili powder, garlic powder, salt, and pepper to create a thick flavor paste.
  • Place the sliced chicken and vegetables directly onto the prepared baking sheet.
  • Pour the spice mixture over the ingredients and use tongs or your hands to toss everything until every piece is thoroughly coated.
  • Spread the mixture into a single, even layer across the pan, making sure not to overcrowd it so the ingredients roast rather than steam.
  • Roast in the oven for 18 to 22 minutes, tossing the ingredients halfway through with a spatula to ensure even browning.
  • Optional: Turn on the broiler for the final 2 minutes of cooking to achieve charred spots on the peppers.
  • While the chicken rests, wrap the tortillas in foil and warm them in the oven for a few minutes until pliable.
  • Serve the smoky chicken and peppers immediately in the warm tortillas with your favorite toppings.

Notes

To avoid soggy vegetables, ensure the oven is fully preheated before the pan goes in. For a gourmet twist, add fresh pineapple chunks during the last 10 minutes of roasting for a sweet-and-smoky contrast. Leftovers can be stored in an airtight container for up to 3 days and are excellent in a steak-style fajita bowl.
