Sizzling Garlic Butter Steak Bites with Creamy Spaghetti

Equipment

Ingredients
  

  • 1 lb sirloin steak, cut into bite-sized cubes
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp olive oil (for steak)
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • 1 tbsp chopped parsley, for garnish
  • 8 oz spaghetti
  • 1 tbsp olive oil (for pasta sauce)
  • 3 cloves garlic, minced (for sauce)
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ¼ tsp ground nutmeg
  • Salt and pepper, to taste (for sauce)
  • ¼ cup reserved pasta water

Instructions
 

  • Pat steak cubes dry with paper towel. Season with salt, pepper, and smoked paprika.
  • Heat olive oil and 2 tbsp butter in a skillet over medium-high. Sear steak in a single layer for 1–2 minutes per side until browned. Transfer to a plate.
  • Reduce heat to medium-low. Add remaining 2 tbsp butter to the skillet. Once melted, stir in minced garlic and cook for 30–60 seconds.
  • Return steak bites and juices to the skillet. Toss in garlic butter and garnish with parsley. Turn off heat.
  • While steak cooks, boil spaghetti in salted water until al dente. Reserve 1/4 cup pasta water and drain pasta.
  • In a saucepan, heat olive oil over medium. Sauté garlic for 1–2 minutes until fragrant.
  • Add heavy cream, then stir in Parmesan, nutmeg, salt, and pepper. Simmer 2–3 minutes, stirring, until slightly thickened.
  • Toss drained spaghetti into the sauce with reserved pasta water. Stir until coated and glossy. Adjust seasoning as needed.
  • Plate spaghetti and top with garlic butter steak bites. Drizzle extra garlic butter on top and garnish with parsley and Parmesan.

Notes

Sear steak in batches to avoid crowding. Use freshly grated Parmesan for a smoother sauce. A splash of pasta water helps the spaghetti sauce cling and stay silky.
