Ingredients
  

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ¼ teaspoon red pepper flakes optional
  • 8 cups chicken broth low sodium preferred
  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 cup chopped kale or spinach
  • ½ cup small pasta ditalini or orzo
  • Salt to taste
  • Pepper to taste
  • Fresh parsley, chopped for serving
  • Grated Parmesan cheese for serving
  • Crusty bread for serving

Instructions
 

  • Heat the olive oil in a large pot or Dutch oven over medium heat.
  • Add the onion, carrots, and celery and cook, stirring occasionally, until softened, about 5-7 minutes.
  • Add the minced garlic, oregano, thyme, and red pepper flakes (if using) and cook for another minute, until fragrant.
  • Pour in the chicken broth and bring to a simmer.
  • Add the chicken pieces and diced tomatoes (undrained). Gently simmer for 15-20 minutes, or until the chicken is cooked through.
  • Stir in the kale or spinach, cannellini beans, and pasta.
  • Continue to simmer until the pasta is tender, about 8-10 minutes.
  • Season with salt and pepper to taste.
  • Ladle the Rustic Tuscan Chicken Soup into bowls.
  • Garnish with fresh parsley and grated Parmesan cheese, if desired.
  • Serve with crusty bread for dipping.

Notes

For a richer flavor, use homemade chicken broth. Be careful not to overcook the pasta. If making ahead, cook the pasta separately and add it when reheating. This soup can be stored in the refrigerator for 3-4 days or frozen for up to 2-3 months. Add a peeled potato while simmering if the soup is too salty.
