Quick Garlic Steak Tortellini

Ingredients
  

  • 1 pound steak bites sirloin or your favorite cut
  • 4 cloves garlic, minced
  • 4 tablespoons butter
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes optional
  • Salt and pepper to taste
  • 20 ounces cheese tortellini fresh or refrigerated
  • ½ cup reserved pasta water
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions
 

  • Heat the olive oil and butter in a large skillet over medium-high heat.
  • Add the steak bites to the skillet and cook for about 3-5 minutes, stirring occasionally, until browned on all sides and cooked to your desired doneness.
  • Add the minced garlic, oregano, and red pepper flakes (if using) to the skillet. Cook for another minute, stirring constantly, until the garlic is fragrant but not burnt.
  • Season with salt and pepper to taste.
  • Remove the steak from the skillet and set aside. Keep it warm.
  • While the steak is cooking, bring a large pot of salted water to a boil.
  • Add the tortellini to the boiling water and cook according to the package directions (usually 3-5 minutes, or until they float).
  • Before draining the tortellini, reserve about 1/2 cup of the pasta water.
  • Drain the tortellini and add it to the skillet with the garlic butter steak.
  • Toss the tortellini and steak together in the skillet, adding the reserved pasta water a little at a time until the sauce reaches your desired consistency.
  • Stir in the grated Parmesan cheese and parsley.
  • Serve immediately and enjoy!

Notes

Don't overcrowd the pan when cooking the steak for optimal searing. Use fresh garlic for the best flavor. For a creamier sauce, stir in a dollop of mascarpone cheese or crème fraîche at the end. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet or microwave, adding water or broth as needed to prevent drying.
