Ingredients
  

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • ½ cup BBQ sauce
  • ¼ cup ranch dressing
  • 1 cup cooked rice or quinoa
  • ½ cup black beans, rinsed and drained
  • ½ cup corn kernels
  • ¼ cup shredded cheddar cheese
  • ¼ cup chopped red onion
  • ¼ cup chopped cilantro
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions
 

  • In a bowl, toss the chicken pieces with olive oil, salt, and pepper.
  • Heat a skillet or grill pan over medium-high heat.
  • Cook the chicken until fully cooked and browned, about 5-7 minutes.
  • Add the BBQ sauce to the chicken and cook for another 1-2 minutes, until heated through.
  • In two bowls, divide the cooked rice or quinoa.
  • Top with the BBQ chicken, black beans, corn, cheddar cheese, red onion, and cilantro.
  • Drizzle with ranch dressing and serve immediately.

Notes

For a spicier kick, add a pinch of red pepper flakes to the chicken. Store leftovers in an airtight container in the refrigerator for up to 3 days. You can also substitute the rice or quinoa with lettuce for a low-carb option.
