Ingredients
  

  • ½ cup pumpkin puree not pumpkin pie filling
  • ½ frozen banana
  • ½ cup milk dairy or non-dairy
  • ¼ cup Greek yogurt optional
  • 1 tablespoon maple syrup or honey
  • ¼ teaspoon pumpkin pie spice
  • Pinch of cinnamon
  • Handful of spinach optional
  • Pinch of salt optional
  • Whipped cream or chopped nuts for topping optional

Instructions
 

  • Gather all ingredients.
  • Prep the banana: Ensure it is frozen for a thick and creamy texture. If using a fresh banana, add a few ice cubes.
  • Combine ingredients in a blender: Add the pumpkin puree, frozen banana, milk, Greek yogurt (if using), maple syrup, pumpkin pie spice, cinnamon, and spinach (if using) to the blender.
  • Blend until smooth: Start on low speed and gradually increase to high. Blend for about 30-60 seconds, or until everything is completely smooth and creamy. If the smoothie is too thick, add a little more milk. If it's too thin, add a few more ice cubes.
  • Taste and adjust: Give the smoothie a taste and adjust the sweetness or spice level to your liking. Add more maple syrup for sweetness or pumpkin pie spice/cinnamon for more spice.
  • Pour and enjoy: Pour the smoothie into a glass and enjoy immediately. Top with a sprinkle of cinnamon, a dollop of whipped cream, or chopped nuts, if desired.

Notes

For best results, use high-quality pumpkin puree. If you don't have a frozen banana, freeze one for at least 30 minutes before blending. A pinch of salt can enhance the flavors. Experiment with different spices like ginger, nutmeg, or cloves. Leftover smoothie can be stored in an airtight container in the refrigerator for up to 24 hours, but shake well before drinking. For variations, try adding cocoa powder for a chocolate pumpkin smoothie, vanilla extract and nutmeg for a pumpkin pie smoothie, or cold coffee for a pumpkin spice latte smoothie.
