Ingredients
  

  • 6 slices bread (challah, brioche, or Texas toast recommended)
  • 2 large eggs
  • ½ cup milk or cream
  • ¼ cup pumpkin puree
  • 2 tablespoons sugar or maple syrup
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon vanilla extract
  • 1 pinch salt
  • butter or oil for cooking
  • toppings of your choice (maple syrup, whipped cream, powdered sugar, etc.)

Instructions
 

  • In a shallow dish, whisk together the eggs, milk, pumpkin puree, sugar, pumpkin pie spice, vanilla extract, and salt.
  • Heat a lightly oiled griddle or frying pan over medium-low heat.
  • Dip each slice of bread into the custard mixture, soaking for about 30-60 seconds per side, until saturated but not soggy.
  • Cook the French toast for 2-3 minutes per side, or until golden brown and cooked through.
  • Serve immediately with your favorite toppings.

Notes

Adjust the pumpkin spice to taste, and consider using heavy cream for extra richness. No pumpkin spice? Mix cinnamon, nutmeg, ginger, and cloves instead. Leftovers keep well for 3 days in the fridge — reheat in the oven or microwave.
