Ingredients
  

  • 6 slices bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups potatoes, peeled and cubed
  • 4 cups chicken broth
  • 1 cup milk
  • 1 cup heavy cream
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup shredded cheddar cheese
  • Salt and black pepper, to taste
  • 2 green onions, sliced (for garnish)

Instructions
 

  • In a large pot, cook chopped bacon over medium heat until crispy. Remove with a slotted spoon and set aside, leaving about 2 tablespoons of drippings in the pot.
  • Add diced onion to the bacon drippings and cook until soft and golden. Stir in minced garlic for 30 seconds, just until fragrant.
  • Toss in the cubed potatoes and pour in the chicken broth. Bring to a boil, then reduce heat and simmer for 15–20 minutes, or until potatoes are tender.
  • In a small saucepan, melt butter and whisk in flour to make a smooth roux. Gradually add milk, whisking constantly until thickened.
  • Pour the milk mixture into the soup, stir in heavy cream, and simmer for another 5 minutes until slightly thickened.
  • Stir in cheddar cheese until melted and creamy. Add salt and black pepper to taste.
  • Ladle into bowls, top with crispy bacon and sliced green onions. Serve warm with crusty bread — perfection!

Notes

For extra texture, mash some potatoes before serving. Add toppings like sour cream, extra cheddar, or crispy onions for even more indulgence.
