Equipment

  • Blender
  • Small saucepan
  • Measuring cups and spoons
  • Lemon juicer
  • Glasses for serving
  • Spatula or spoon
  • Knife
  • Cutting board

Ingredients

  • 2 cups fresh or frozen raspberries
  • ½ cup fresh lemon juice from 4-5 lemons
  • 2 cups water
  • ½ cup granulated sugar adjust to taste
  • 4-6 cups ice, depending on desired consistency
  • Lemon slices, for garnish optional
  • Fresh raspberries, for garnish optional

Instructions

  • Prepare the Lemonade Base: In a small saucepan, combine the water and sugar.
  • Heat and Dissolve: Heat the mixture over medium heat, stirring constantly, until the sugar is completely dissolved. The liquid will become clear and syrupy.
  • Cool the Syrup: Remove the saucepan from the heat and let the syrup cool completely. This prevents the ice from melting too quickly.
  • Juice the Lemons: While the syrup cools, juice your lemons. Freshly squeezed lemon juice makes a world of difference!
  • Combine Lemon Juice and Syrup: Once the syrup is cool, pour it into a blender. Add the freshly squeezed lemon juice.
  • Add Raspberries: Add the raspberries (fresh or frozen) to the blender. Frozen raspberries will give you a thicker, icier texture.
  • Blend Until Smooth: Blend the mixture until it's completely smooth. Stop and scrape down the sides of the blender if needed.
  • Add Ice: With the blender running, gradually add the ice, one cup at a time, until you reach your desired slushie consistency. Aim for a thick but sippable texture.
  • Taste and Adjust: Taste the slushie and adjust the sweetness or tartness as needed. Add more sugar if it's too tart, or more lemon juice if it's too sweet.
  • Serve Immediately: Pour the Raspberry Lemonade Slushie into glasses and garnish with lemon slices and fresh raspberries, if desired. Enjoy immediately!

Notes

For the thickest slushie, use frozen raspberries. Be careful not to over-blend, as this can melt the ice and make the slushie watery. The sweetness and tartness of raspberries and lemons can vary, so adjust the sugar and lemon juice to your liking. To make the lemonade base in advance, store it in the refrigerator for up to a week. You can also freeze the slushie mixture for up to a month; thaw slightly and blend again before serving. Try adding other berries like strawberries or blueberries for a mixed berry slushie. For an adult version, add a shot of vodka, gin, or rum.
