Ingredients
  

  • 2 lbs potatoes Yukon Gold or Russet
  • ¼ cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper or to taste
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped for garnish, optional

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, toss the cubed potatoes with olive oil, minced garlic, Italian seasoning, salt, and pepper. Make sure the potatoes are evenly coated with the oil and spices.
  • Add the grated Parmesan cheese to the bowl and toss again until the potatoes are well coated.
  • Spread the potatoes in a single layer on a baking sheet lined with parchment paper. Avoid overcrowding the pan; use two baking sheets if needed.
  • Bake for 30-40 minutes, or until the potatoes are tender and golden brown, flipping halfway through for even browning.
  • Remove from the oven and garnish with fresh chopped parsley, if desired.
  • Serve immediately and enjoy!

Notes

For extra crispy potatoes, avoid overcrowding the pan and consider increasing the oven temperature slightly for the last few minutes of baking. To prevent burning, reduce the oven temperature or cover the potatoes loosely with foil during the last 10-15 minutes. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) until heated through and crispy. Use less oil, lower-fat Parmesan, and add vegetables for a healthier version.
