Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup honey
  • 2 tbsp sriracha
  • 1 tbsp apple cider vinegar
  • 1 tbsp low sodium soy sauce
  • 1 tsp red pepper flakes optional
  • 1 clove garlic, minced
  • Cooked rice, quinoa, or Salad Pasta as needed
  • 1 avocado, sliced
  • ½ cup corn kernels
  • ½ cup black beans, rinsed and drained
  • ¼ red onion, thinly sliced
  • ¼ cup cilantro, chopped
  • Lime wedges, for serving
  • Optional: Greek yogurt or sour cream for topping

Instructions
 

  • Dice chicken into 1-inch cubes.
  • In a small bowl, whisk together garlic powder, paprika, salt, and pepper.
  • In another bowl, whisk together honey, sriracha, apple cider vinegar, soy sauce, red pepper flakes (if using), and minced garlic.
  • Prepare your chosen base: cook rice, quinoa, or Salad Pasta according to package directions.
  • Slice the avocado and red onion, chop the cilantro, and measure out your corn and black beans.
  • Heat the olive oil in a large skillet or wok over medium-high heat.
  • Add the seasoned chicken to the skillet in a single layer, avoiding overcrowding.
  • Cook the chicken for about 5-7 minutes, or until it's cooked through and lightly browned on all sides.
  • Pour the hot honey sauce over the cooked chicken.
  • Stir to coat the chicken evenly with the sauce.
  • Let the sauce simmer for 2-3 minutes, or until it thickens slightly.
  • Divide your cooked rice, quinoa, or Salad Pasta among bowls.
  • Top with the hot honey chicken.
  • Arrange the avocado, corn, black beans, and red onion around the chicken.
  • Garnish with fresh cilantro and a squeeze of lime juice.
  • If desired, add a dollop of Greek yogurt or sour cream for a cooling effect.

Notes

For extra juicy chicken, brine it in a saltwater solution for 30 minutes to an hour before cooking. Experiment with different types of honey for unique flavors. Add a dash of smoked paprika or liquid smoke for a smoky element. Store leftover chicken and base separately in the fridge for up to 3 days. Add avocado right before serving to prevent browning. For a spicier dish, add a pinch of cayenne pepper to the sauce.
