Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • ½ cup milk
  • 1 pound boneless, skinless chicken breasts, cooked and shredded
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon black pepper, or to taste
  • ¼ teaspoon nutmeg, optional
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions
 

  • Heat the olive oil in a large pot or Dutch oven over medium heat.
  • Add the diced onion, carrots, and celery. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes.
  • Add the minced garlic and cook for another minute until fragrant.
  • Pour in the chicken broth and bring to a simmer.
  • Add the Italian seasoning, salt, pepper, and nutmeg (if using). Stir well to combine.
  • Gently stir in the shredded chicken and gnocchi.
  • Bring the soup back to a simmer and cook until the gnocchi are tender and float to the surface, about 3-5 minutes.
  • Reduce the heat to low and stir in the heavy cream and milk.
  • Heat gently, being careful not to boil. Simmer for another 2-3 minutes to allow the flavors to meld together.
  • Ladle the Chicken Gnocchi Soup into bowls and garnish with fresh parsley.
  • Serve immediately and enjoy.

Notes

For a richer soup, use more heavy cream. For a lighter soup, use more milk. You can use rotisserie chicken to save time. Be careful not to overcook the gnocchi. Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat on the stovetop or in the microwave. For a vegetarian option, omit the chicken and use vegetable broth. You can also add extra vegetables like spinach, kale, mushrooms, zucchini, or bell peppers.
