Ingredients
  

  • 2 lbs boneless, skinless chicken breasts, cooked and cubed or shredded
  • 8 oz cooked ham, diced
  • 4 oz Swiss cheese, shredded
  • 4 oz Gruyere cheese, shredded optional
  • ½ cup milk or chicken broth
  • ¼ cup mayonnaise
  • 1 tbsp Dijon mustard
  • ½ tsp garlic powder
  • ¼ tsp black pepper
  • 1 cup crushed buttery crackers like Ritz
  • 2 tbsp melted butter

Instructions
 

  • Preheat your oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish.
  • Cook the chicken: You can boil, bake, or shred rotisserie chicken.
  • In a large bowl, combine the cooked chicken, diced ham, and shredded Swiss and Gruyere cheese (if using). Mix well.
  • In a separate bowl, whisk together the cream of chicken soup, milk or chicken broth, mayonnaise, Dijon mustard, garlic powder, and black pepper until smooth.
  • Pour the sauce over the chicken and ham mixture. Gently stir until well coated.
  • Spread the mixture evenly into the prepared baking dish.
  • In a small bowl, combine the crushed buttery crackers and melted butter. Toss to coat.
  • Sprinkle the cracker mixture evenly over the top of the casserole.
  • Bake in the preheated oven for 25-30 minutes, or until the casserole is heated through and the topping is golden brown and bubbly.
  • Let the casserole rest for 5-10 minutes before serving.

Notes

Don't overcook the chicken. Use quality ingredients for the best flavor. Add chopped vegetables like broccoli, asparagus, or mushrooms. Add red pepper flakes for a kick. Assemble ahead of time and store in the refrigerator for up to 24 hours, adding the cracker topping right before baking. Serve with steamed green beans or a fresh salad.
