Ingredients
  

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Salt to taste
  • Pepper to taste
  • 2 ripe avocados
  • 1 tablespoon lime juice
  • ¼ teaspoon red pepper flakes optional
  • 4 slices bread sourdough, ciabatta, or multigrain
  • 4 slices cheddar cheese
  • 2 tablespoons butter, softened
  • Arugula or spinach optional
  • Tomato slices optional
  • Hot sauce optional

Instructions
 

  • Pound chicken breasts to an even thickness (about 1/2 inch).
  • In a small bowl, whisk together olive oil, paprika, garlic powder, onion powder, salt, and pepper.
  • Rub the spice mixture all over the chicken breasts.
  • Halve, pit, and scoop out the avocados into a bowl.
  • Mash avocados with a fork. Stir in lime juice, red pepper flakes (if using), salt, and pepper.
  • Butter one side of each slice of bread.
  • Heat a skillet over medium-high heat.
  • Add the chicken breasts and cook for about 5-7 minutes per side, or until cooked through and a meat thermometer reads 165°F (74°C).
  • Let the chicken rest for a few minutes before slicing or shredding it.
  • Place two slices of bread, butter-side down, in the skillet.
  • Top each slice with cheddar cheese.
  • Add a layer of sliced or shredded chicken.
  • Spoon a generous amount of avocado mash over the chicken.
  • If using optional toppings like arugula, tomato slices, or bacon, add them now.
  • Top with another slice of cheddar cheese.
  • Place the remaining slices of bread on top, butter-side up.
  • Cook the sandwiches over medium heat for about 3-4 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
  • Remove the sandwiches from the skillet and let them cool slightly before slicing in half.
  • Serve immediately and enjoy.

Notes

For a spicy kick, add cayenne pepper or hot sauce to the avocado mash or use pepper jack cheese. Use leftover roasted or rotisserie chicken to save time. Experiment with different bread types like sourdough, ciabatta, or brioche. For extra crispy sandwich, grill the bread. You can prep the chicken and avocado mash ahead of time and store them separately in the refrigerator.
