Equipment

  • Air fryer
  • Mixing bowl
  • Tongs
  • Oil Sprayer (Optional)
  • Parchment Paper Liners (Optional)
  • Knife
  • Cutting board
  • Measuring spoons
  • Measuring cups
  • Salad Spinner or Kitchen Towel

Ingredients

  • 1 pound mixed vegetables broccoli, cauliflower, Brussels sprouts, carrots, bell peppers, zucchini, onions, asparagus
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder optional
  • ¼ teaspoon paprika optional
  • ¼ teaspoon Italian seasoning optional

Instructions

  • Preheat your air fryer to 400°F (200°C).
  • Wash and cut the vegetables into bite-sized pieces. Ensure all pieces are roughly the same size for even cooking.
  • Dry the vegetables thoroughly using a salad spinner or clean kitchen towel. Excess moisture prevents crisping.
  • In a mixing bowl, toss the vegetables with olive oil, salt, pepper, garlic powder, and any other desired seasonings. Make sure the vegetables are evenly coated.
  • Arrange the vegetables in a single layer in the air fryer basket. Avoid overcrowding; cook in batches if necessary.
  • Air fry for 8-12 minutes, flipping or shaking halfway through, or until the vegetables are tender-crisp and slightly browned. Cooking time may vary depending on your air fryer and the vegetables used.
  • Remove the vegetables from the air fryer and serve immediately. Enjoy while hot and crispy.

Notes

For best results, use fresh, high-quality vegetables. Don't overcrowd the air fryer basket; cook in batches if necessary to ensure even crisping. To reheat leftovers, air fry at 350°F (175°C) for a few minutes until heated through. Experiment with different seasoning blends to customize the flavor to your liking; consider adding a pinch of red pepper flakes for a spicy kick, or tossing with lemon juice and oregano for a Mediterranean twist. Store leftover cooked vegetables in an airtight container in the refrigerator for up to 3 days.
