Ingredients
  

  • ½ cup grated Parmesan cheese
  • ¼ cup breadcrumbs panko or Italian seasoned
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt or to taste
  • ¼ teaspoon black pepper or to taste
  • 1 tablespoon chopped fresh parsley or dill optional, for garnish

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Pat the salmon fillets dry with paper towels.
  • In a medium bowl, combine the grated Parmesan cheese, breadcrumbs, olive oil, lemon juice, garlic powder, dried oregano, salt, and pepper. Mix well until evenly combined.
  • Place the salmon fillets on the prepared baking sheet.
  • Evenly spread the Parmesan mixture over the top of each salmon fillet, pressing lightly to help it adhere.
  • Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and the Parmesan crust is golden brown and slightly crispy. The internal temperature of the salmon should reach 145°F (63°C).
  • If you want an extra crispy crust, you can broil the salmon for the last 1-2 minutes, but keep a close eye on it to prevent burning!
  • Remove the salmon from the oven and let it rest for a few minutes before serving.
  • Garnish with fresh parsley or dill, if desired.

Notes

For best results, pat the salmon dry before applying the Parmesan mixture. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven at 300°F (150°C) until heated through. Variations: add a pinch of red pepper flakes for spice, experiment with different herbs like thyme or rosemary, or add grated lemon zest for a citrusy flavor.
