Ingredients
  

  • 2 lbs Yukon Gold Potatoes
  • 1 lb Smoked Sausage Kielbasa, Andouille, or your favorite
  • 1 cup Ranch Dressing
  • 1 cup Shredded Cheddar Cheese
  • ½ cup Shredded Monterey Jack Cheese
  • ¼ cup Olive Oil
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • ½ tsp Smoked Paprika
  • Salt and Pepper to taste
  • Optional: Fresh chives or parsley, for garnish

Instructions
 

  • Preheat your oven to 400°F (200°C). Place the oven rack in the middle position.
  • Wash and dice the Yukon Gold potatoes into roughly 1-inch pieces. No need to peel them.
  • Slice the smoked sausage into 1/2-inch thick rounds.
  • In a large bowl, toss the diced potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Ensure the potatoes are evenly coated.
  • Spread the seasoned potatoes in a single layer on the prepared baking sheet or roasting pan.
  • Arrange the sliced smoked sausage evenly over the potatoes.
  • Bake in the preheated oven for 25-30 minutes, or until the potatoes are tender and slightly golden brown. Toss the potatoes and sausage halfway through to ensure even cooking.
  • Remove the baking sheet from the oven.
  • Drizzle the ranch dressing evenly over the potatoes and sausage.
  • Sprinkle the cheddar cheese and Monterey Jack cheese over the top.
  • Return the baking sheet to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly. Watch carefully to prevent burning.
  • Remove from the oven and let it cool for a few minutes before serving.
  • Garnish with fresh chives or parsley, if desired.
  • Serve immediately and enjoy!

Notes

For crispier potatoes, parboil them for 5 minutes before roasting. Adjust the type of smoked sausage and cheese to your preference. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave until warmed through. Add chopped vegetables like bell peppers or onions for extra flavor and nutrients.
