Ingredients
  

  • 3 cups rolled oats old-fashioned
  • 1 ½ cups all-purpose flour
  • 1 cup packed brown sugar
  • ½ cup granulated sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¾ cup 1 ½ sticks
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ - 1 cup mix-ins of your choice chocolate chips, dried cranberries, walnuts, etc.

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 9x13 inch baking pan with butter or cooking spray, or line with parchment paper.
  • In a large bowl, whisk together the rolled oats, flour, brown sugar, granulated sugar, baking soda, salt, and cinnamon.
  • In a separate bowl, whisk together the melted butter, eggs, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  • Gently fold in your chosen mix-ins.
  • Press the mixture evenly into the prepared baking pan.
  • Bake for 25-30 minutes, or until the edges are golden brown and the center is set. A toothpick inserted into the center should come out clean or with a few moist crumbs attached.
  • Let the bars cool completely in the pan before cutting into squares.

Notes

For best results, use old-fashioned rolled oats. Quick-cooking oats can be substituted, but the texture will be slightly different. Store the bars in an airtight container at room temperature for up to 4 days or freeze for up to 2 months. For peanut butter oatmeal bars, add ½ cup peanut butter to the wet ingredients and use peanut butter chips as a mix-in. For apple cinnamon oatmeal bars, add 1 cup chopped apples and ½ teaspoon nutmeg to the dry ingredients. Customize your mix-ins to create your favorite flavor combinations.
