Ingredients
  

  • 2-3 lbs boneless, skinless chicken breasts or thighs
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup butter, melted
  • 4-6 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 cup chicken broth
  • 2 tbsp cream cheese, softened (optional)
  • Fresh parsley, chopped (for garnish)

Instructions
 

  • Place chicken breasts in the crockpot. Pound slightly if thick for even cooking.
  • In a bowl, mix melted butter, Parmesan, garlic, Italian seasoning, salt, and pepper.
  • Pour sauce over chicken and spread evenly to coat.
  • Add chicken broth to the bottom of the crockpot to keep moist.
  • Cover and cook on low for 6–8 hours or high for 3–4 hours until chicken is fork tender.
  • Shred the chicken in the crockpot and stir in cream cheese, if using, until melted and creamy.
  • Garnish with parsley and serve over pasta, rice, mashed potatoes, or as is.

Notes

Use chicken thighs for more flavor and moisture. Add cream cheese for a creamier sauce. Serve with pasta, rice, mashed potatoes, or as a sandwich. Store leftovers in the fridge up to 4 days or freeze for 2–3 months.
