Ingredients
  

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • ¼ teaspoon red pepper flakes or more to taste
  • ½ cup oil-packed sun-dried tomatoes, drained and chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese, freshly grated
  • ¼ cup fresh basil, chopped
  • Salt and black pepper to taste
  • Optional: Cooked chicken or sausage, for extra protein
  • Optional: Spinach or kale, for added nutrients

Instructions
 

  • Cook the tortellini according to package directions. Drain and set aside.
  • Heat the olive oil in a large skillet over medium heat.
  • Add the minced garlic and red pepper flakes, and sauté for about 30 seconds, until fragrant, being careful not to burn the garlic.
  • Add the chopped sun-dried tomatoes to the skillet and cook for another minute, stirring occasionally.
  • Pour in the chicken broth and heavy cream. Bring to a simmer, then reduce the heat to low.
  • Stir in the grated Parmesan cheese. Continue stirring until the cheese is melted and the sauce is smooth and creamy.
  • Season with salt and black pepper to taste.
  • Add the cooked tortellini to the skillet with the creamy sauce. Gently toss to coat the tortellini evenly.
  • If using any optional add-ins like cooked chicken or sausage, stir them in now.
  • Remove the skillet from the heat and stir in the chopped fresh basil.
  • Serve immediately, garnished with extra Parmesan cheese and fresh basil, if desired.

Notes

For the best flavor, use high-quality Parmesan cheese and freshly grated is recommended. Watch the garlic carefully while sautéing to prevent burning. If the sauce becomes too thick, add a splash of chicken broth or milk. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently, adding a little liquid if needed. Consider adding a squeeze of lemon juice at the end for brightness.
