Equipment

  • Large skillet
  • Small saucepan with lid
  • Cutting board
  • Chef's knife
  • Wooden spoon or spatula
  • Measuring cups and spoons
  • Fine-mesh strainer (for rinsing rice)
  • Two forks (for shredding chicken)
  • Serving bowls

Ingredients

  • 1 ½ lbs boneless, skinless chicken thighs or breasts
  • 2 ripe mangoes, divided 1 for sauce, 1 for garnish
  • 2-3 chipotle peppers in adobo sauce, minced, plus 1 tablespoon adobo sauce
  • 1 cup long-grain white rice or jasmine
  • 1 small red onion, diced
  • 3 cloves garlic, minced
  • ½ cup chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • Salt, to taste
  • Black pepper, to taste
  • ¼ cup fresh cilantro, chopped for garnish
  • Lime wedges for serving

Instructions

  • Rinse 1 cup of rice under cold water until the water runs clear. In a small saucepan, combine the rinsed rice with 1 ¾ cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
  • While the rice cooks, pat the chicken thighs dry and season generously with salt, pepper, and the ground cumin.
  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-6 minutes per side, until golden brown and cooked through (internal temperature of 165°F/74°C). Remove the chicken to a plate and let it rest.
  • Reduce the heat to medium. Add the remaining 1 tablespoon of olive oil to the same skillet. Sauté the diced red onion for 3-4 minutes until softened. Add the minced garlic and cook for 30 seconds until fragrant.
  • Stir in the minced chipotle peppers and 1 tablespoon of the adobo sauce. Add the diced mango (the one meant for cooking). Cook for 2-3 minutes, letting the mango soften and release its juices.
  • Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Let the sauce simmer for 5 minutes, until it thickens slightly.
  • Using two forks, shred the rested chicken thighs. Return the shredded chicken to the skillet with the mango chipotle sauce. Stir to coat evenly and let simmer for another 2 minutes. Taste and adjust seasoning with salt or a squeeze of lime.
  • Divide the fluffy rice among serving bowls. Top with a generous portion of the mango chipotle chicken. Garnish with the fresh diced mango, chopped cilantro, and a squeeze of lime juice. Serve immediately.

Notes

For a milder dish, use 2 chipotle peppers; for more heat, use 3. If fresh mango is unavailable, use thawed and drained frozen mango for the sauce, but not for the garnish. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, add a splash of water or broth to restore moisture. For a low-carb option, serve over cauliflower rice. For a vegan version, substitute the chicken with jackfruit or hearty mushrooms and use vegetable broth.
