Equipment

  • Large cast-iron skillet
  • Mixing Bowls
  • Whisk
  • Chef's knife
  • Cutting board
  • Measuring spoons and cups
  • Meat thermometer

Ingredients

  • 1.5 lbs Chicken breast, cut into bite-sized cubes
  • 2 cups Fresh sweet corn kernels
  • ½ cup Cotija cheese, crumbled
  • ½ cup Greek yogurt or Mexican crema
  • 2 tablespoons Olive oil
  • 2 tablespoons Lime juice
  • 1 tablespoon Lime zest
  • 1 teaspoon Smoked paprika
  • ½ teaspoon Cumin
  • ½ teaspoon Garlic powder
  • ½ teaspoon Salt
  • 1 tablespoon Butter
  • ¼ cup Fresh cilantro, chopped
  • 2 cups Cooked white rice or mixed greens
  • Optional: Pickled red onions, toasted pepitas, and sliced serrano peppers for garnish

Instructions

  • In a medium bowl, toss the chicken cubes with olive oil, lime juice, garlic powder, cumin, and smoked paprika. Let marinate for at least 10 minutes while prepping other ingredients.
  • Heat a large cast-iron skillet over medium-high heat until nearly smoking. Add the corn kernels in a single layer without oil to achieve an authentic dry char.
  • Once the corn starts to pop and turn golden brown, add a pat of butter and a pinch of salt. Toss to coat, then remove the corn from the pan and set aside.
  • Wipe the skillet and add a touch more oil if needed. Add the marinated chicken, ensuring the pan isn't crowded so the meat sears rather than steams.
  • Cook the chicken until golden brown on all sides and it reaches an internal temperature of 165°F. Remove from heat.
  • In a small bowl, whisk together the Greek yogurt (or crema), lime zest, lime juice, and chopped cilantro. Add a dash of hot sauce or chipotle powder if a spicy kick is desired.
  • Assemble the bowls by starting with a base of warm rice or fresh greens.
  • Layer the black beans, charred corn, and seared chicken over the base.
  • Drizzle the creamy cilantro-lime dressing over the top and finish with a heavy sprinkle of Cotija cheese and your choice of optional garnishes.

Notes

To level up the dish, use browned butter for the corn and add quick-pickled red onions for acidity. Leftovers can be stored in an airtight container for up to 3 days; keep the dressing separate to maintain freshness. For a vegan alternative, replace chicken with roasted cauliflower and use a cashew-based lime crema.
