Lasagna Soup: Crazy Delicious!

Ingredients
  

  • 1 pound Italian sausage sweet or hot, or a mix!
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth or beef broth for a richer flavor
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper or to taste
  • 8 ounces lasagna noodles, broken into small pieces
  • 1 cup ricotta cheese
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley optional, for garnish

Instructions
 

  • In a large pot or Dutch oven, brown the Italian sausage over medium-high heat. Break it up with a spoon as it cooks. Drain off any excess grease.
  • Add the chopped onion to the pot and cook until softened, about 5 minutes. Then, add the minced garlic and cook for another minute until fragrant.
  • Pour in the crushed tomatoes and tomato sauce. Stir to combine. Then, add the chicken broth (or beef broth).
  • Stir in the dried oregano, dried basil, salt, and pepper. Give it a good stir to ensure everything is evenly distributed.
  • Bring the soup to a simmer. Then, reduce the heat to low, cover, and let it simmer for at least 15 minutes.
  • Increase the heat to medium and bring the soup back to a gentle boil. Add the broken lasagna noodles. Cook until the noodles are tender, about 8-10 minutes. Be sure to stir occasionally to prevent the noodles from sticking together.
  • While the noodles are cooking, in a small bowl, combine the ricotta cheese and Parmesan cheese. Stir until well combined.
  • Ladle the Lasagna Soup into bowls. Top each serving with a spoonful of the ricotta mixture and a sprinkle of fresh parsley, if desired. Serve immediately and enjoy!

Notes

Don't overcook the noodles, keep a close eye on them and test frequently. Adjust the seasoning to your taste and add vegetables like carrots, celery, or bell peppers. Lasagna soup can be stored in the refrigerator for 3-4 days or frozen for 2-3 months.
