Ingredients
  

  • 4 cups vanilla ice cream, softened slightly
  • ½ cup fresh key lime juice about 15-20 key limes
  • 4 ounces cream cheese, softened
  • ¼ cup sweetened condensed milk
  • ¼ cup milk adjust for desired thickness
  • 1 cup graham cracker crumbs, plus extra for garnish
  • Whipped cream, for topping optional
  • Lime wedges, for garnish optional

Instructions
 

  • Prepare the Graham Cracker Crumbs: Place graham crackers in a food processor or a resealable bag. Pulse or crush until you have fine crumbs. Set aside.
  • Soften the Ice Cream and Cream Cheese: Allow the ice cream and cream cheese to sit at room temperature for about 10-15 minutes to soften slightly. This will make them easier to blend.
  • Juice the Key Limes: Fresh key lime juice is essential for that authentic flavor. Squeeze enough key limes to yield 1/2 cup of juice.
  • Combine Ingredients in Blender: In a blender, combine the softened ice cream, key lime juice, softened cream cheese, sweetened condensed milk, milk, and 1 cup of graham cracker crumbs.
  • Blend Until Smooth: Blend on medium speed until all ingredients are well combined and the milkshake is smooth and creamy. If the milkshake is too thick, add a splash more milk until you reach your desired consistency.
  • Taste and Adjust: Give the milkshake a taste and adjust the sweetness or tartness as needed. If it's not sweet enough, add a little more sweetened condensed milk. If it's too sweet, add a squeeze more key lime juice.
  • Pour and Garnish: Pour the milkshake into glasses. Top with whipped cream (if desired) and a sprinkle of graham cracker crumbs. Garnish with a lime wedge for an extra touch of elegance.
