Ingredients
  

  • 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon ginger, grated
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • 1 lb noodles spaghetti, linguine, or your favorite type
  • 4 tablespoons olive oil
  • 6 cloves garlic, minced
  • ½ cup soy sauce
  • ¼ cup honey
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • ½ teaspoon red pepper flakes optional
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Sesame seeds for garnish
  • Chopped green onions for garnish

Instructions
 

  • In a bowl, combine the chicken pieces with soy sauce, cornstarch, grated ginger, garlic powder, and black pepper. Mix well and marinate for at least 10 minutes.
  • Whisk together soy sauce, honey, brown sugar, rice vinegar, sesame oil, and red pepper flakes (if using) in a small bowl. Set aside.
  • Prepare the cornstarch slurry by mixing cornstarch and water in a separate small bowl until smooth.
  • Cook the noodles according to package directions. Drain and set aside.
  • Heat olive oil in a large skillet or wok over medium-high heat.
  • Add the marinated chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Cook in batches if necessary.
  • Add the minced garlic to the skillet and cook for about 30 seconds, until fragrant.
  • Pour the prepared sauce over the chicken and garlic. Bring to a simmer.
  • Add the cornstarch slurry to the sauce and stir continuously until the sauce thickens to your desired consistency, about 1-2 minutes.
  • Add the cooked noodles to the skillet and toss to coat evenly with the sauce.
  • Garnish with sesame seeds and chopped green onions, if desired.
  • Serve immediately and enjoy!

Notes

Don't overcook the noodles; cook them al dente for the best texture. Adjust the sauce to your taste by modifying the amount of honey, soy sauce, or red pepper flakes. Add chopped vegetables like broccoli or bell peppers for a healthier dish. The sauce can be made ahead and stored in the refrigerator for up to 3 days. Store leftover noodles in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or skillet, adding a splash of water if dry. For a vegetarian option, use tofu or tempeh instead of chicken. To make it a shrimp version, substitute chicken with shrimp.
