Irresistible Slow Cooker Taco Casserole

This slow cooker taco casserole is a layered fiesta of seasoned ground beef, melted cheese, and crispy tortillas. It's an easy and delicious weeknight meal the whole family will love. Simply layer the ingredients in your slow cooker and let it work its magic!

Equipment

Ingredients
  

  • 1 pound ground beef
  • 1 packet taco seasoning
  • ½ cup water
  • 2 cups shredded cheddar cheese
  • 6-8 flour tortillas 6-inch
  • Optional: Sour cream, salsa, guacamole, chopped cilantro, sliced black olives, green onions, jalapenos for topping

Instructions
 

  • In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.
  • Stir in the taco seasoning and water. Bring to a simmer and cook for 5-7 minutes, or until the liquid is mostly absorbed.
  • Spray your slow cooker with non-stick cooking spray.
  • Spread a thin layer of refried beans on the bottom of the slow cooker.
  • Arrange a layer of tortilla wedges or strips over the refried beans, overlapping slightly.
  • Top with half of the seasoned ground beef, half of the diced tomatoes and green chilies, and half of the shredded cheese.
  • Repeat layers: tortillas, remaining ground beef, remaining diced tomatoes and green chilies, and remaining cheese.
  • Cover the slow cooker and cook on low for 4-6 hours or on high for 2-3 hours, or until the cheese is melted and bubbly and the tortillas are soft.
  • Let it sit for 5-10 minutes before serving.
  • Top with your favorite toppings and serve.

Notes

Spice it up by adding cayenne pepper to the ground beef or using spicier taco seasoning. Get creative with the layers - add cooked rice, black beans, corn, or sauteed vegetables. Use your favorite cheese or a combination of cheeses like Monterey Jack, pepper jack, and queso quesadilla. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the microwave or oven. For variations: Chicken Taco Casserole: Substitute shredded cooked chicken for ground beef, Vegetarian Taco Casserole: Use a plant-based ground meat substitute or a mixture of black beans, corn, and other vegetables, Spicy Taco Casserole: Add jalapenos, hot sauce, or a spicier taco seasoning, Creamy Taco Casserole: Stir in a can of cream of mushroom soup or sour cream before cooking.
