Ingredients
  

  • 4 boneless, skinless chicken breasts about 6 ounces each
  • ¼ cup olive oil
  • ¼ cup lemon juice
  • 2 cloves garlic, minced
  • 2 tablespoons fresh oregano, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes optional

Instructions
 

  • In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, rosemary, parsley, salt, pepper, and red pepper flakes (if using).
  • Place the chicken breasts in a resealable plastic bag or a shallow dish.
  • Pour the marinade over the chicken, making sure to coat all sides.
  • Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to overnight.
  • Preheat your grill to medium heat (about 350-400°F or 175-200°C).
  • Remove the chicken from the marinade and discard the marinade.
  • Place the chicken breasts on the preheated grill.
  • Grill for 6-8 minutes per side, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C). Use a meat thermometer to be sure!
  • Remove the chicken from the grill and let it rest for 5-10 minutes before slicing. This allows the juices to redistribute.

Notes

For best flavor, marinate the chicken overnight. Fresh herbs are preferred, but dried herbs can be substituted (use half the amount). Pound chicken breasts to an even thickness for even cooking. Let the chicken rest for a few minutes after grilling to retain juices. Serve with Greek salad, roasted vegetables, couscous, or grilled asparagus. To add a zestier flavor, add lemon zest to the marinade. Experiment with different herb combinations like basil, mint, or chives. For a touch of heat, add a pinch of chili flakes.
