Ingredients
  

  • 1.5 lbs mixed mushrooms cremini, shiitake, oyster, and button
  • 4-6 cloves garlic, minced
  • 2 tablespoons fresh thyme leaves or 2 teaspoons dried thyme
  • ¼ cup olive oil
  • 1 tablespoon balsamic vinegar optional
  • 1 teaspoon salt, or to taste
  • ½ teaspoon black pepper, or to taste
  • Pinch of red pepper flakes optional
  • Fresh parsley, chopped for garnish

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Line a large baking sheet with parchment paper.
  • In a large bowl, combine the cleaned and sliced mushrooms, minced garlic, thyme, olive oil, balsamic vinegar (if using), salt, pepper, and red pepper flakes (if using).
  • Toss everything together well to ensure the mushrooms are evenly coated.
  • Spread the mushrooms in a single layer on the prepared baking sheet, avoiding overcrowding.
  • Roast for 20-25 minutes, or until the mushrooms are tender and golden brown, stirring halfway through.
  • Remove the roasted mushrooms from the oven and transfer them to a serving dish.
  • Garnish with fresh chopped parsley.
  • Serve immediately and enjoy.

Notes

Don't overcrowd the pan to avoid steaming the mushrooms. Roast at high heat for caramelization. Balsamic vinegar adds sweetness and acidity. Fresh thyme is preferred but dried can be used. Adjust garlic and seasoning to your liking. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Variations include adding lemon juice and rosemary, cayenne pepper, parmesan cheese, or balsamic glaze.
