Ingredients
  

  • 4 boneless skinless chicken breasts
  • 0.5 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 0.75 cup grated Parmesan cheese (divided)
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • salt and black pepper to taste
  • 0.25 cup olive oil for frying
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream (or half-and-half)
  • 0.5 cup chicken broth
  • 2 tbsp fresh parsley, chopped

Instructions
 

  • Place chicken breasts between plastic wrap and pound to ½-inch thickness. Season with salt and pepper.
  • In three shallow bowls, place: (1) flour, (2) beaten eggs, (3) breadcrumb-Parmesan mix with Italian seasoning, garlic powder, salt, and pepper.
  • Dredge chicken in flour, dip in egg, then coat with breadcrumb-Parmesan mixture. Press to adhere.
  • Heat olive oil in a skillet over medium heat. Cook chicken 5–7 min per side until golden brown and internal temp is 165°F. Transfer to wire rack.
  • In a saucepan, melt butter. Sauté garlic for 1–2 minutes until fragrant.
  • Add cream and broth. Simmer gently. Stir in remaining Parmesan cheese and simmer until slightly thickened (about 5 minutes).
  • Season sauce to taste. Stir in chopped parsley and remove from heat.
  • Serve chicken with garlic sauce spooned over. Garnish with more parsley and Parmesan if desired.

Notes

Make the garlic sauce ahead and reheat gently before serving. Add red pepper flakes for a kick or lemon zest for brightness. Bake instead of fry for a lighter version. Use thighs if preferred — they’re juicy and just as tasty!
